It's prepared in Maharashtrian style and tastes good with chapati or " poli" as we call it or steamed rice or " bhaat" as we say.   1. 2 cups Fresh pumpkin cut in triangle shapes (with skin)
  2. 2 tablespoons Cooking oil
  3. 1 tsp Mustard
  4. 1 tsp Cumin seeds
  5. 1/2 tsp Methi (Fenugreek) seeds
  6. 1/4 tsp Hing/ asafoetida
  7. 10 Curry leaves
  8. 2 Chopped green chillies
  9. 1 Dry red chilli broken
  10. 1 tsp Chopped garlic
  11. 1 tsp Chopped ginger
  12. 1/2 tablespoon Poppy seeds
  13. 1 Tablespoon Groundnut powder
  14. 1/2 tsp Chilli powder
  15. 1 tsp Turmeric powder
  16. 1 tsp Garam masala powder
  17. 1/2 tsp Saunf powder
  18. 1 tsp Aamchur powder or tamarind pulp
  19. 1 tsp Jaggery Powder
  20. to taste Salt
  21. as needed Hot water for gravy
  22. as required Chopped coriander leaves to garnish
  23. as required Steamed rice to serve

Instructions to make to make Pumpkin Curry (भोपळ्याची रस्सा भाजी)

  1. First, heat oil in a pan. Add mustard and Cumin seeds. Let them pop up. Then add methi seeds and let them release aroma.
  2. Add hing and Curry leaves. Saute for half a minute. Then add ginger, garlic, chillies and stir cook for a half a minute.
  3. Then add turmeric powder, and pumpkin pieces. Stir and mix well for a minute. Then add 1 /2 cup hot water, cover and cook till pumpkin turns soft. Keep checking in between.
  4. Light roast groundnut powder, poppy seeds and saunf powder for 2 minutes on low flame. Then add to the curry. Mix well.
  5. Add rest of the masala, aamchur or tamarind pulp, jaggery, salt and mix nicely. Add more hot water as per gravy consistency needed and stir well.
  6. Cook covered for 5 minutes. Then switch off flame and pour in serving bowl. Garnish with chopped coriander leaves. Serve steaming hot with steamed rice or chapati. Enjoy yummylicious pumpkin curry!
