- 1 Handful: Cashews- Roasted, Optional
- 1/4 Cup Sweetcorn Kernels: Optional
- 1/2 Cup Green Peas: Any
- 2 Tempering Spices: Bay Leaves- Broken
- 7-8 Cloves
- 5-6 Green Cardamoms
- 1 Black Cardamom
- 6-7 Whole Black Peppercorns
Instructions to make to make Colourful Mixed Veggies Fried Rice
- First up: Wash, clean & soak the rice for at least 30 mins time- This ensures, quick & easy cooking of the same- Set aside for later use



- Chop all the aforementioned veggies as required... keep handy with the tempering spices & ground masalas & be ready with all the ingredients required for the cooking- Since it’s simply a quick, easy yet delectable one-pot meal/dish



- Heat up a heavy bottomed pan/pot or similar, on medium-high flame: Add in the oil & ghee mixture or you can simply choose to use only ghee (I always use desi ghee), in it...



- Add in the tempering spices, one by one- let them start crackling & turn aromatic (without burning them for sure), goes in the finely chopped onions in it now- Sauté until translucent



- Goes in the chopped veggies in it, at this point- sauté until they all are reduced in quantity & kinda half sautéed/cooked (don’t overcook it- they’ll lose their colours & that’s what we’re not intending to do)



- In another pan placed over the medium flame- Add in some more ghee/oil or the admixture of both & sauté the soaked rice in it until its colour changes & becomes a bit translucent (this frying of the raw rice is VVI, that prevents it from breaking easily while it’s being cooked) ie. takes care of its brittleness



- Now, once both are well sautéed: Add in this sautéed rice in the main pot- in which we’re supposed to prepare the fried rice- Goes in the ground masalas & seasonings too...Mix everything well together until nicely combined & again, sauté for about a couple of minutes time



- Add in the measured water now (Ratio- 1:2- which’s required to cook the half sautéed veggies in it, too), else if it’d been just only the Rice- then, the Ratio for the fried rice would be: (1:1.5) & that’s normal for such aromatic rice dishes & not for cooking any regular rice



- Also, remember that: The rice had been soaking for over 30 mins time now hence, it’s soaked enough moisture from it- So, Please be very careful about the Rice & Water RATIO, while cooking anything- Like: Biriyani, Pulao, etc. & this ratio is valid only for the Basmati Rice (the ratio does vary from rice to rice as well)

- Checkout the seasonings at this point: The water should be seemingly overly SALTY & you might freak out thinking how to now balance that- Don’t worry, at this point- if it seems over salty (that’s what should be done exactly), when it’s prepared the Pulao or Fried Rice should be perfectly seasoned- You can vouch for that on me

- Finally, once done with all if you’re pressure cooking: Allow it to have just a single whistle- Then, immediately turn off the flame & do not try to open the lid immediately, instead allow the pressure to vent out naturally, keeping it over the hot oven itself & then open the lid & check



- Finally, those who’re not opting for the pressure cooker/pan: They just simply need to wait for about 10 mins time, covering the pan for the rice to be perfectly cooked yet shouldn’t be sticky or mushy

- Dish out...Enjoy it as is or with any of your choicest Raitas, or other condiments- if you at all choose to do so- I love to have it simply as is with my favourite Plain Curd Raita without any veggies in it, as it kills the taste of the Fried Rice, for me...
