  22. 5 medium tomatoes
  23. 4 cloves garlic
  24. 1 tsp cumin powder
  25. 1 tsp salt
  26. 1/2 tsp sugar
  27. 1 tsp red chilli powder
  28. 3-4 green chilles
  29. 2 tbsp coriander
  30. 1 Juice from lemon
  31. for sour cream
  32. 1 cup hung curd
  33. 1/4 cup cream
  34. 1 tsp garlic powder
  35. 1 tsp lemon juice
  36. 1/4 tsp pepper powder
  37. to taste Salt
  38. for stir fried veggies
  39. 1 red bell
  40. 1 yellow bell
  41. 1 green bell
  42. 1/4 cup spring onions bulbs
  43. 1/4 cup spring onion greens
  44. 1 tbsp garlic
  45. 1 tsp red chilli powder
  46. 1 tsp cumin powder
  47. to taste Salt

Instructions to make to make Mexican Burritos

  1. Preparing salsa : Take all the ingredients mentioned under salsa. Roughly chop the onions, tomatoes and chillies. Pulse them in the mixer. The salsa should be slightly chunky and not a runny paste. Remove in a bowl and set aside.
  2. For Mexican rice : Heat oil in a vessel, add the chopped garlic and Chilli flakes. Saute for a few seconds. Now add some of the spring onions. Add rice and roast for a few seconds. Add tomato puree and mix well. Adjust the consistency by adding vegetable stock and let the rice cook till almost done. Add the capsicum, yellow bell and spring onion and coriander leaves. Mix well. Simmer with lid till done.
  3. For sour cream : mix hung curd, cream, garlic powder, pepper powder, lemon juice and salt and chill in refrigerator. Add salt and lemon juice as per your curd. If it is too sour you can reduce their quantity.
  4. For baked beans : Heat oil, add chopped garlic, Chilli flakes and saute, add red chilli powder, spring onions and the baked beans. Mix well. Simmer for few minutes.
  5. For stir fried veggies : Heat oil. Add chopped garlic, red chilli powder, cumin powder, salt and pepper powder. Saute for a few seconds. Add the onions and other veggies,Stir fry for a few minutes and set aside. Now we have everything ready to assemble the burritos.
  6. Assembling of the Burritos.. Take a tortilla in a plate. First add a big spoonful of rice, then add baked beans, add salsa, stir fried veggies, pickled jalapenos, sour cream, grated cheese and lettuce. Fold the burritos by tucking in the sides. Heat a grill pan and smear some oil on it. Place the burritos on the pan and cook for a few minutes from both sides. Enjoy with some nachos, salsa and sour cream at the side.
